Conclusions - The Tent

This was a fantastic season that began back in August with an all day blowout and preseason night game with the Pittsburg Steelers.

The day was sunny and very hot. Our new 10 by 20 tent was put into action. It provided well needed shade for what we estimate was 150 tailgaters.



We used the tent throughout the warm season and left it behind when it became cold and warm sunlight was welcome.

Finally the tent was put back in service in the home playoff game where we were subject to steady rain.

The tent was well made and sturdy. It provided shelter from rain and heat and saved the day more than once.



However it is very heavy and bulky and takes 4 people at least to set up and tear down.

At $900 cost and all the custom logos and letter I say the tent is a big winner. Thanks to everyone who chipped in to cover the costs.

The tent is in dry storage in the off season.

Play Off Menu vs Arizona

Rally the troops with our now semi famous sausage kabob. We haven't lost since we began serving them with sausage, red onion, bell peppers and pineapple.

Dry rubbed and hickory smoked wings.

YOU BRING THE SIDES. Beans, potato salad, deserts, whatever you please.

Starts at noon Saturday and the game is on at 4:35 in the Stadium or TV at the tailgate.

Ancient Tailgate Scrolls - The Hot Dog Chili Carolina Style




6 cups of chopped onion
3 cloves of chopped garlic
2 each 28 ounce cans of crushed tomatoes
3 pounds of lean hamburger (not browned)
¼ cup of sugar
1 tablespoon of Cayenne pepper
6 tablespoons of Chili powder
5 tablespoons of Paprika
Salt and black pepper to taste

The key to the authentic texture of the chili is the beef. I used ground chuck. I then put the Chuck in a zip lock bag and kneaded it to mix the fat. What I want it very small beef particles making the chili smooth.

I put the beef in a large stock pot with cold water and very slowly brought it up to temperature being careful not to even approach a boil. You want to separate the fat slowly without clumping the meat.

What happens is a smooth beef sludge forms. This is what you are looking for.

In a separate pot I cooked the onions, garlic, and tomatoes.

This takes a lot of stirring and slow heating.

Once the beef is brown then add it to the veggie pot. Add spices, salt and pepper and sugar. It starts to smell and look like the real deal.

Cook low for another 30 minutes and let it rest.
