Headlines from OTAs

It is at a slow point in the offseason in the NFL, with workouts being pretty much the only thing going on until training camp in late July. If you have any suggestions for stories or anything you would like for me to talk about, feel free to let me know through email or commenting. I will start covering other sports as well. Thanks! Here are some of the things that have happened in the NFL in the past few days:

Tampa Bay Bucs and Manchester United Owner Malcolm Glazer died at age 85. His legacy will not be forgotten and may he rest in peace.

Cam Newton has his boot off and is limited, but is participating in OTAs. Coach Rivera said that he could be available for the team full time during the June minicamps.


Cowboys LB Sean Lee tore the ACL in his left knee and is expected to miss the entire season. It is reported that the team is trying to replace him from within, but there are options available in free agency, such as Pat Angerer, Stewart Bradley, and Ernie Sims, who has been on and off the team over the past few years. It is very disappointing for both Lee and the Cowboys. Lee is a great player who has a ton of potential but has been injury prone his entire career, which has kept him from making a Pro Bowl and made the Cowboy's defense a lot worse without him.

Carolina Panthers' CB Charles Godfrey and G Amini Silatolu spent time doing individual drills after missing the majority of last season due to injuries. They are expected to be able to participate in team drills by the June minicamps, if not by the end of these OTA sessions.

Despite what QB Michael Vick has been saying, Coach Rex Ryan says that there is an open competition between Vick and Geno Smith for the starting position.

Browns' WR Josh Gordon has been suspended for the entire 2014 season for failing a drug test for the third time in his short career due to use of marijuana. He is appealing the suspension. If he does succeed in getting the suspension appealed, it is very unlikely that he will be in the clear. He will still likely be suspended for at least four games (like Patriots' CB Brandon Browner) in addition to probably being on probation yet again.

Our wings need no hot sauce, but we have it if you prefer.











Flank Steak

One of the staples of Extreme Tailgate is Sebastian's Famous Flank Steak. It is our comfort food.



It is good as a stand alone snack, in a sandwich, add onions and cheese and it coverts to Philly Cheesesteak sandwich.

The secret is in the recipe, and here it is.

Flank Steak Marinade

1/3 cup olive oil
1/3 cup soy sauce
Juice of 1/2 lime
1 T candied ginger chopped
Few drops garlic juice
1 t accent
Marinade at least 6 hours
Grill on direct heat 5-7 minutes per side
Slice thin on a diagonal

Bar Improvements


Today we gave the bar a good cleaning and checkout. Since last season we have added more bottle openers, LED lights, four electric outlets, and a new Weber Ranch Kettle.


Still to go is a new receiver hitch and a mesh/expanded metal over the tongue for more storage.

The grill will roll off from the back when we arrive at the tailgate.

Wing Recipe




The Rub Recipe

1/2 cup paprika
3 tablespoons cayenne pepper
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme
1/2 cup of sugar

I toss the wings in garlic olive oil and then liberally mix the rub. I let them sit a few hours in zip lock bags.

The wings are briefly seared and then cooked indirectly for about 40 minutes using hickory smoke.

I have sauces to add but frankly there is enough flavor and complexity just off the grill.
